The Ultimate Chocolate Chip Cookies: No Margarine!


There's nothing quite like a freshly baked chocolate chip cookie. The sweet aroma filling the kitchen, the anticipation of that first warm, gooey bite – it's a timeless treat! Today, I'm sharing my all-time favorite chocolate chip cookie recipe, one that i've created recently. These cookies have nice, crisp edges and a soft, chewy center that's sure to satisfy.


The Backstory

This recipe came about somewhat unexpectedly. I didn't have enough brown sugar and I was out of cornstarch, a key ingredient in the recipe I had always made. Rather than give up on my cookie-baking plans, I decided to get a little creative and improvised with the ingredients I had on hand. To my delight, the result was a batch of chocolate chip cookies that surpassed my expectations. The combination of the white sugar, brown sugar, and vanilla pudding mix, created a cookie with a delightful texture and flavor.

Ingredients:

  • 1 cup of vegetable oil

  • 1/2 cup white sugar

  • 1/2 cup brown sugar

  • 1/2 cup vanilla pudding powder mix

  • 2 teaspoons vanilla extract

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 2 eggs

  • 2 1/2 cups of all-purpose flour

  • 1 cup of chocolate chips

Optional Toppings:

  • M&Ms

  • Chocolate chunks

  • Coarse salt

  • Nuts

Instructions:

  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C). This will ensure it's nice and hot when your cookies are ready for baking.

  2. Mix the Wet Ingredients: In a large mixing bowl, combine the vegetable oil, white sugar, brown sugar, and vanilla pudding powder. Stir these ingredients until they are well blended.

  3. Add Vanilla and Leavening Agents: Stir in the vanilla extract, baking soda, and salt. These ingredients will give your cookies their characteristic flavor and help them rise during baking.

  4. Incorporate Eggs: Add the eggs one at a time, mixing well after each addition. This ensures that they are evenly distributed throughout the dough.

  5. Add Flour Gradually: Gently stir in the all-purpose flour, but be careful not to overmix the dough. Overmixing can lead to tough cookies, and we want these to be soft and delicious.

  6. Fold in Chocolate Chips: Once the flour is fully incorporated, fold in the chocolate chips. These little bursts of chocolatey goodness will make your cookies truly irresistible.

  7. Shape the Cookies: Use a melon scooper or your hands to shape the cookie dough into approximately 40 small balls. Place them on a baking sheet lined with parchment paper, leaving some space between each one.

  8. Customize Your Cookies: Here's where you can get creative. If you'd like to add extra flair to your cookies, press M&Ms, chocolate chunks, coarse salt, or nuts onto the top of each dough ball. This not only enhances the flavor but also makes your cookies look stunning.

  9. Bake to Perfection: Pop the baking sheet into the preheated oven and bake for about 10-12 minutes. Keep a close eye on them, as baking times may vary depending on your oven. You want the edges to turn golden brown while keeping the centers soft and slightly underbaked for that perfect chewiness.

  10. Cool and Enjoy: Once your cookies are done, remove them from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
