This recipe began at my wedding shower when my sister and my best friend who were both hosting it, collected 2-3 favorite recipes on index cards from each guest. One of them was a remarkable chocolate cake recipe, from my mother's next-door neighbor. Until last week, it was the best recipe ever! That's when I tasted my sister-in-law's recipe. She had taken my recipe, and made a few delightful tweaks to create the ultimate decadent chocolate cake, and today, I'm excited to pass it on to you.
THE SECRET INGREDIENT: The whip is the trick to creating a very decadent cake. If you do not have whip, You can stick to the original amazing recipe. in place of the whip- use 1 cup (pareve) milk or water. You'll also need to use 1 1/2 cups of sugar instead of 3/4 cup.
Ingredients:
Dry Ingredients (Bowl 1):
2 cups of all-purpose flour
3/4 cups of sugar
3/4 cup of cocoa powder
1 package of baking powder
1 1/2 teaspoons of baking soda
1 teaspoon of salt
1 package of vanilla sugar
Wet Ingredients (Bowl 2):
2 eggs
1 tablespoon of instant coffee, mixed with a bit of hot water
1/2 cup of oil
1 cup of Pareve whipped cream (like Rich's or קצפת צמחית) Don't whip it up!
At the Very End:
1 cup of boiling water
Method:
Preparation: Preheat your oven to 350°F (175°C). Grease A 9X13.
Mix the Dry Ingredients: In Bowl 1, combine the flour, sugar, cocoa powder, baking powder, baking soda, salt, and vanilla sugar. Make sure everything is well-mixed. This will be your dry ingredient mix.
Mix the Wet Ingredients: In Bowl 2, beat the eggs and then add the instant coffee mixture, oil, and whip (or water/ milk). Stir until the wet ingredients are well combined.
Combine the Mixtures: Slowly pour the contents of Bowl 2 (wet ingredients) into Bowl 1 (dry ingredients). A (hand) mixer is recommended for this step, as it helps create a smooth and homogenous batter. If you don't have a hand mixer, a fork will work, but it might take a little more effort.
Add the Boiling Water: Once your wet and dry ingredients are well combined, add a cup of boiling water. This might seem unusual, but it's another secret that makes this cake incredibly moist and rich. Mix it in until you have a silky, lump-free batter.
Bake: Pour the batter into your prepared pan and place it in the preheated oven. Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean. The baking time may vary, so keep a close eye on your cake.
The Decadent Twist: To take your cake to the next level, grab a good quality non-dairy plain chocolate bar. Before your cake has cooled, spread the chocolate all over the top. This extra layer of chocolatey goodness will make your cake irresistible.
IMPORTANT: This cake should not be put into a bunt - as it is incredibly moist, and will be difficult to tip over nicely and easily from a bunt.
