I’m super excited to share this amazing recipe for healthy chocolate chip cookies. They’re so delicious, you won’t believe they’re actually good for you! 🙌
Ingredients:
Dry Ingredients:
2 cups of almond flour (or 1 3/4 cups of regular flour, white spelt, or whole wheat. If you’re using 100% whole wheat, use just a bit less than 1 3/4 cups)
1/4 cup of cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
Wet Ingredients:
2 tablespoons of coconut oil or butter, melted
1/4 cup of coconut milk or any other milk
6 tablespoons maple syrup
1 egg
Extras:
1/2 cup of chocolate chips
Instructions:
Mix the Dry Ingredients: In a large bowl, combine the almond flour (or your flour of choice), cornstarch, baking powder, and salt. Give it a good stir to make sure everything is well mixed.
Mix the Wet Ingredients: In a separate bowl, mix together the melted coconut oil or butter, coconut milk (or your milk of choice), maple syrup, and the egg. Whisk until everything is combined and smooth.
Combine: Pour the wet ingredients into the dry ingredients. Stir until just combined – don’t overmix!
Add the Chocolate Chips: Fold in the chocolate chips until evenly distributed.
Preheat and Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Scoop and Bake: Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet. Press them down slightly with the back of a spoon. Bake for 10-12 minutes, or until the edges are golden brown.
Cool and Enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious, healthy chocolate chip cookies!
Note: I don’t chill the dough before baking, hut feel free to try that step and let me know how it turns out!
