The Best Ever Healthy Chocolate Chip Cookies


Hey there, friends!

I’m super excited to share this amazing recipe for healthy chocolate chip cookies. They’re so delicious, you won’t believe they’re actually good for you! 🙌


Ingredients:

Dry Ingredients:

  • 2 cups of almond flour (or 1 3/4 cups of regular flour, white spelt, or whole wheat. If you’re using 100% whole wheat, use just a bit less than 1 3/4 cups)

  • 1/4 cup of cornstarch

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

Wet Ingredients:

  • 2 tablespoons of coconut oil or butter, melted

  • 1/4 cup of coconut milk or any other milk

  • 6 tablespoons maple syrup

  • 1 egg

Extras:

  • 1/2 cup of chocolate chips

Instructions:

  1. Mix the Dry Ingredients: In a large bowl, combine the almond flour (or your flour of choice), cornstarch, baking powder, and salt. Give it a good stir to make sure everything is well mixed.

  2. Mix the Wet Ingredients: In a separate bowl, mix together the melted coconut oil or butter, coconut milk (or your milk of choice), maple syrup, and the egg. Whisk until everything is combined and smooth.

  3. Combine: Pour the wet ingredients into the dry ingredients. Stir until just combined – don’t overmix!

  4. Add the Chocolate Chips: Fold in the chocolate chips until evenly distributed.

  5. Preheat and Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  6. Scoop and Bake: Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet. Press them down slightly with the back of a spoon. Bake for 10-12 minutes, or until the edges are golden brown.

  7. Cool and Enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious, healthy chocolate chip cookies!

Note: I don’t chill the dough before baking, hut feel free to try that step and let me know how it turns out!
