EASY AND IRRESISTIBLE LATKES



Chanuka! The miracle of lights! Bring on all doughnuts and latkes! While I generally lean towards healthier cooking, there's something about the tradition of using oil and frying during Chanuka. Today, I'm going to share my easy latke recipe with you. It's easy, its fried, and its irresistible!


I Got Rid of my Food Processor:

If you've been in my course, or read my book or articles, you might know that I bid farewell to my food processor. I only used it once a year for my latkes. The time spent getting out the machine, putting it together, then cleaning it up and putting it away, is nearly equivalent to just using a simple hand grater.


The Ingredients:

  • 6 potatoes, peeled and grated (about 6.5- 7 cups)

  • 1 onion, chopped

  • 3 eggs, whisked

  • 1/2 cup flour

  • Salt and pepper to taste

  • Optional: Zucchini, peeled, grated, and squeezed of moisture


The Process:

  1. Grating Potatoes: Begin by peeling and grating the potatoes. Then, place the grated potatoes in a colander and squeeze out as much liquid as possible.

  2. Mixing the Ingredients: In a mixing bowl, combine the grated potatoes with chopped onions, eggs, flour, salt, and pepper. For a health-conscious twist, sneak in some grated Zucchini. Mix the ingredients thoroughly to create a well-blended batter.

  3. Frying to Perfection: Heat oil in a frying pan until it sizzles. Take a spoonful of the latke batter and gently place it in the hot oil. Allow the latke to flatten on its own. Once the outer edges turn a beautiful golden brown, flip it over to cook the other side.
