This delightful and straightforward recipe has been a family favorite for years. It's not only delicious but incredibly easy to make. Plus, if you prefer bite-sized treats, it works beautifully as muffins. I usually halve the recipe, as the full batch makes a generously-sized 9x13 pan.
When I make these, I use less sugar and add a few more apples—but, it's really a matter of personal preference.
Wet Ingredients:
2 cups sugar
3 large eggs
1 1/2 cups oil
Dry Ingredients:
3 cups flour
2 tablespoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
Additional:
3-4 peeled and finely diced apples
Instructions:
Mix 2 cups of sugar, 3 large eggs, and 1 1/2 cups of oil until the mixture turns a lemon yellow color.
Add 3 cups of flour, 2 tablespoons of cinnamon, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. You can sift them if you'd like, but I usually skip this step.
Gently fold in the peeled and diced apples.
Pour the batter into a greased 9x13 pan for bars or muffin cups for muffins.
Gently sprinkle cinnamon on top.
Bake at 350 until a toothpick inserted comes out clean.
