Best Apple Cake Ever- Perfect for Shabbos!



This delightful and straightforward recipe has been a family favorite for years. It's not only delicious but incredibly easy to make. Plus, if you prefer bite-sized treats, it works beautifully as muffins. I usually halve the recipe, as the full batch makes a generously-sized 9x13 pan.

When I make these, I use less sugar and add a few more apples—but, it's really a matter of personal preference.


Wet Ingredients:

  • 2 cups sugar

  • 3 large eggs

  • 1 1/2 cups oil

Dry Ingredients:

  • 3 cups flour

  • 2 tablespoons cinnamon

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

Additional:

  • 3-4 peeled and finely diced apples


Instructions:

  1. Mix 2 cups of sugar, 3 large eggs, and 1 1/2 cups of oil until the mixture turns a lemon yellow color.

  2. Add 3 cups of flour, 2 tablespoons of cinnamon, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. You can sift them if you'd like, but I usually skip this step.

  3. Gently fold in the peeled and diced apples.

  4. Pour the batter into a greased 9x13 pan for bars or muffin cups for muffins.

  5. Gently sprinkle cinnamon on top.

  6. Bake at 350 until a toothpick inserted comes out clean.
